This acai bowl is my favorite summer morning breakfast or lunch. It’s incredibly filling, refreshing and each bite is full of nutrition. I found myself buying two to four acai bowls at over $10 each every week a few months back, and decided it was time to make one myself. It turned out to be a really fun experiment and I ended up with this delicious mixture that I recommend everyone tries!
First–what is up with the acai craze, you ask? First off–Acai is a berry found in the rain forests of the Amazon. It has been used for centuries as a healing, immune-stimulating and energizing fruit, due to it’s incredibly high antioxidant value. That being said, it’s not the cheapest thing to find in the U.S., we generally buy it in frozen packs or in a powder-form. Luckily, a little goes a long way and I believe it’s worth the ‘investment’. Research has shown that because this berry is so high in antioxidants, it greatly helps support in the prevention of diseases associated with oxidative damage.
Here is my ultimate Acai & Coconut Bowl:
1 whole Young Thai coconut (ask the grocery store to open it for you then re-wrap it)
–Coconut meat (scrape it out of the coconut with a spoon)
1/2 tsp coconut oil
1 tbsp acai powder (I used Nativas Naturals)
1/2 cup raw cashews
1/4-1/2 cup frozen blueberries
Hulled hemp seeds, to top
Bee pollen, to top
Fresh fruit, to top
1. Add all ingredients (except the toppings) to a blender until there’s a smooth but thick consistency. If you want a smoothie, blend longer
2. Top with nutritious goodies to add texture!
