Smoothie Parfait_4

After picking up tons of fresh berries at the farmers market and coming home to my prepped chia pudding, I decided to do something totally insta-worthy. This chia seed smoothie parfait is exactly what it looks like–oozing with complex flavors and nutrient-dense ingredients.

This parfait is loaded with whole foods and nutritional benefits. The chia pudding by itself offers tons of omega-3 fatty acids, antioxidants and fiber. The smoothie adds more antioxidants, protein, essential fats, anti-inflammatory properties, Vitamin C and electrolytes. I highly recommend visiting your local farmers market this time of year – it’s the best time for berries and stone fruit. We’re really lucky in Santa Monica to find fresh mulberries and yellow raspberries–but if you can’t find that, you can layer and top with blueberries, red raspberries, blackberries or strawberries.

Ingredients for Smoothie:
1/3 cup blueberries
1/3 cup raw cashews
1/2 cup coconut water
1 frozen banana, cubed
1/4 avocado
1 tbsp hemp seeds
Dash of cinnamon
Fresh fruit to top, we used mulberries & yellow raspberries

1. Add all ingredients to your high-speed blender and mix to create smoothie (note: this smoothie is a lot thicker than your average, since we are layering it not drinking from a straw)
2. As it shows in the moving image above, the layering is as follows: chia pudding, smoothie, fresh fruit, chia pudding, smoothie, fresh fruit
3. Jar up any left overs for later or tomorrow
