This beautiful, nutrient-dense super food smoothie bowl is the ultimate summer breakfast. I mean, don’t you just want to dive in? It’s full of vitamins and minerals to nourish the body while tasting equally delicious. What makes this extra special, is the addition of Pitaya AKA Dragon Fruit.
Pitaya is the exotic fruit of a cactus plant, which can be found seasonally at health food stores, hailing from Central America and Southeast Asia. When it was brought to Asia it was renamed as the more common title, Dragon Fruit. The fruit has a beautiful pink skin with two variations of flesh: white and pink. What’s the fuss about this fruit? There are tons of benefits: Antioxidants, Vitamin C, Fiber, Magnesium, Vitamin B and Omega-3’s (in the seeds). The nutritional properties of this fruit are said to be a beauty-enhancing fruit–all of these health benefits translate to a healthy gut, glowing skin, shiny hair and strong bones.
The pink center, mostly found in Central America, is extremely difficult to get in the US, it’s also the variation that has a stronger taste. I had the pleasure of meeting with the founder and owner of Pitaya Plus, the company that has single-handedly created the pink pitaya smoothie pack. The smoothie packs are 100% raw (never heated or pasteurized) with zero added sugar–just pitaya! One pack has 4% of your RDI (Recommended Daily Intake) of Vitamin C, 12% RDI of fiber, 10% RDI of magnesium and 6% RDI of Vitamin B2. The founder, Chuck, was living and working in Nicaragua when he fell in love with this fruit, then returned to the US only to find it was nearly impossible to find the quality he once had. Not only has he created the only source of raw pink pitaya in the US, but the company solely employs single mothers in Nicaragua.
Chuck told me one of his favorite, simple ways to enjoy a smoothie pack was with some fresh watermelon and mint. This smoothie bowl is a little twist, here’s how you make it:
1 Pitaya Plus smoothie pack
1 cup fresh watermelon, cubed (+ more for garnish)
2-3 mint leaves
1/2 tbsp vitamineral greens
1/4 small avocado
Local honey, to top
Bee pollen, to top
Chia seeds, to top
1. Blend smoothie pack, 1 cup watermelon, mint leaves, vitamineral greens and avocado in a high-speed blender until smooth
2. Top with cubed watermelon, bee pollen and chia seeds
3. Drizzle honey and ENJOY!
