You know I’m a huge fan of chia pudding, and with the weather warming up I’ve been craving something fresh and vibrant. This particular recipe brings together a few of my favorite flavors: Blueberry, Coconut and Vanilla. All of these beauty foods are rich in nutrients and minerals that support our digestive and cardiovascular systems. Blueberries bring the antioxidants for a healthy heart, skin, hair and nails. Coconut helps energize and metabolize the body due to it’s healthy fat content. Vanilla is great for reducing minor inflammation, therefore improving mental performance. Plus, this recipe adds a punch of even more protein for good measure and healthy muscles/joints. I love the chia pudding and smoothie bowl mix because it seems to be more filling than just one or the other. Plus, there’s the opportunity to experiment with more flavor profiles. For Chia Pudding:
1 tbsp chia seeds
1/2 cup unsweetened almond milk
1 tbsp full-fat coconut cream
1/2 tbsp vanilla protein powder
Drizzle of maple syrup
For the Blueberry Smoothie:
1/2 cup blueberries
1 banana (frozen or fresh)
1 tbsp vanilla protein powder
1 cup unsweetened almond milk
1/2 tbsp sprouted almond butter
+ optional: toppings such as granola (I used Lee From America‘s rawnola here), fresh fruit, cacao nibs, puffed quinoa, etc.
- Mix all of the ingredients for the chia pudding together in an airtight container. Shake vigorously, and place in the fridge. After 15 minutes, mix it up again with a fork to break up any clumps. Refrigerate for at least 3 hours.
- Mix all of the ingredients for the blueberry smoothie together.
- Serve with any topping you like!
